A quick and easy chicken noodle soup recipe ready in 30 minutes.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 2 cups water
  • 2 cups cooked chicken, shredded
  • 1 cup egg noodles
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes.
  3. Add garlic and cook for 1 minute.
  4. Pour in chicken broth and water. Bring to a boil.
  5. Add chicken, noodles, salt, pepper, and thyme.
  6. Simmer for 10 minutes or until noodles are tender.
  7. Serve hot.
