  • 1.5 lbs fresh green beans, trimmed and cut into 1-inch pieces
  • 2 tbsp unsalted butter
  • 1 small onion, finely chopped
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 1.5 cups milk
  • 1 cup chicken or vegetable broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1 cup crispy fried onions

Instructions

  1. Preheat oven to 350°F.
  2. Blanch green beans in boiling water for 5 minutes, then drain and set aside.
  3. In a skillet, melt butter over medium heat. Add onions and mushrooms, sauté until soft.
  4. Stir in garlic, cook for 1 minute.
  5. Add flour and cook for 2 minutes to remove raw taste.
  6. Gradually whisk in milk and broth. Cook until thickened.
  7. Season with salt, pepper, and onion powder.
  8. Mix sauce with green beans and transfer to a baking dish.
  9. Top with fried onions and bake for 25 minutes.
