Spicy and flavorful buffalo chicken meatballs perfect for game day or as an appetizer.

Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup buffalo sauce
  • 1 egg
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup blue cheese crumbles (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix ground chicken, breadcrumbs, buffalo sauce, egg, garlic powder, onion powder, salt, and pepper.
  3. Form the mixture into small meatballs, about 1 inch in diameter.
  4. Place meatballs on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes until fully cooked.
  6. Optional: Toss meatballs in extra buffalo sauce before serving.
  7. Garnish with blue cheese crumbles if desired.

Notes

  • For extra heat, add more buffalo sauce.
  • Serve with ranch or blue cheese dressing for dipping.
