  • 2 cups butternut squash, cubed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 can coconut milk
  • 2 tbsp curry powder
  • 1 tbsp olive oil
  • Salt to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
