- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon pumpkin pie spice
- 1 cup pumpkin puree
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1/3 cup melted butter
- 1/4 cup water
- 2 tablespoons cinnamon
- 2 tablespoons granulated sugar (for topping)
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a bowl, mix flour, baking soda, salt, and pumpkin pie spice.
- In another bowl, whisk pumpkin puree, granulated sugar, brown sugar, eggs, melted butter, and water.
- Combine wet and dry ingredients. Stir until just mixed.
- Fill muffin cups 3/4 full with batter.
- Mix cinnamon and sugar for topping. Sprinkle over muffins.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Cool muffins in the tin for 5 minutes before transferring to a wire rack.
