Delicious pumpkin muffins with a cinnamon sugar topping.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon pumpkin pie spice
  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/3 cup melted butter
  • 1/4 cup water
  • 2 tablespoons cinnamon
  • 2 tablespoons granulated sugar (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a bowl, mix flour, baking soda, salt, and pumpkin pie spice.
  3. In another bowl, whisk pumpkin puree, granulated sugar, brown sugar, eggs, melted butter, and water.
  4. Combine wet and dry ingredients. Stir until just mixed.
  5. Fill muffin cups 3/4 full with batter.
  6. Mix cinnamon and sugar for topping. Sprinkle over muffins.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Cool muffins in the tin for 5 minutes before transferring to a wire rack.

Notes

  • Use fresh pumpkin puree for best results.
  • Do not overmix the batter to keep muffins tender.
  • Store muffins in an airtight container for up to 3 days.
