  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ¼ cup granulated sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream the butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk the flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
  6. Shape the dough into 1-inch balls and roll each in the remaining sugar.
  7. Place the dough balls 2 inches apart on the prepared baking sheet.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
