A hearty and comforting pot roast perfect for a Sunday dinner. Tender beef slow-cooked with vegetables in a rich gravy.

  • 3 lbs beef chuck roast
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 4 cups beef broth
  • 4 carrots, chopped
  • 3 potatoes, chopped
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 tbsp flour

Instructions

  1. Preheat oven to 325°F.
  2. Season the beef with salt, pepper, garlic powder, onion powder, thyme, and rosemary.
  3. Heat olive oil in a large pot over medium-high heat. Sear the beef on all sides until browned.
  4. Remove the beef and add onions, carrots, and garlic. Cook for 5 minutes.
  5. Sprinkle flour over the vegetables and stir to coat.
  6. Pour in beef broth and bring to a simmer.
  7. Return the beef to the pot, cover, and transfer to the oven.
  8. Cook for 3 hours, then add potatoes and cook for another hour.
  9. Remove from oven, slice the beef, and serve hot with vegetables and gravy.

Notes

  • Use a heavy pot like a Dutch oven for even cooking.
  • Let the beef rest for 10 minutes before slicing.
  • For extra flavor, add a splash of red wine to the broth.
