A warm and comforting butternut squash soup, perfect for chilly days. Simple to make with rich flavors.

  • 1 medium butternut squash, peeled and cubed
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup coconut milk

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add butternut squash, broth, salt, pepper, cinnamon, and nutmeg. Bring to a boil.
  4. Reduce heat, cover, and simmer for 20 minutes until squash is tender.
  5. Blend soup until smooth using an immersion blender or food processor.
  6. Stir in coconut milk and heat through.
  7. Serve warm.
