A quick and creamy chicken noodle soup that’s perfect for a weeknight dinner.

Ingredients

  • 1 lb chicken breast, diced
  • 4 cups chicken broth
  • 2 cups water
  • 1 cup heavy cream
  • 2 cups egg noodles
  • 1 carrot, sliced
  • 1 celery stalk, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp butter

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion, carrot, celery, and garlic. Cook for 3 minutes.
  3. Add diced chicken and cook until no longer pink, about 5 minutes.
  4. Pour in chicken broth and water. Bring to a boil.
  5. Stir in egg noodles and simmer for 8 minutes.
  6. Add heavy cream, thyme, salt, and pepper. Simmer for 5 more minutes.
  7. Serve hot.

  • You can use rotisserie chicken for a quicker option.
  • Adjust seasoning to taste.
