Ingredients

  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cloves garlic, minced

Instructions

  1. Boil the baby potatoes in salted water until tender (about 15 minutes).
  2. Drain and let them cool slightly.
  3. Preheat oven to 425°F (220°C).
  4. Place potatoes on a baking sheet and gently smash each with a fork.
  5. Drizzle with olive oil and sprinkle with rosemary, salt, pepper, and minced garlic.
  6. Bake for 25-30 minutes until golden and crispy.
