  • 2 boneless, skinless chicken breasts
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 2 tablespoons lemon juice
  • 2 tablespoons capers, drained
  • 2 tablespoons butter
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Pound the chicken breasts to an even thickness.
  2. Mix flour, salt, and pepper in a shallow dish.
  3. Dredge each chicken breast in the flour mixture.
  4. Heat olive oil in a skillet over medium-high heat.
  5. Cook the chicken for 3-4 minutes per side until golden brown.
  6. Remove the chicken from the skillet and set aside.
  7. Add chicken broth, lemon juice, and capers to the skillet.
  8. Bring to a simmer and cook for 2 minutes.
  9. Stir in butter until melted.
  10. Return the chicken to the skillet and coat with the sauce.
  11. Sprinkle with fresh parsley before serving.
