A quick and simple chicken stir fry with fresh vegetables and savory sauce.

Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 2 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp ginger, grated
  • 1 tsp cornstarch
  • 1/4 cup water
  • 1/2 tsp sesame oil

Instructions

  1. Heat oil in a large pan over medium-high heat.
  2. Add chicken and cook until no longer pink, about 5 minutes.
  3. Add garlic and ginger, stir for 30 seconds.
  4. Add bell pepper, broccoli, and carrot. Cook for 3 minutes.
  5. Mix soy sauce, cornstarch, water, and sesame oil in a bowl.
  6. Pour sauce over the stir fry and toss to coat evenly.
  7. Cook for 2 more minutes until sauce thickens.
  8. Serve hot over rice or noodles.

Notes

  • Use any vegetables you prefer.
