A simple and hearty vegetarian chili featuring sweet potatoes, beans, and spices.

Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups vegetable broth

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic. Cook until soft, about 5 minutes.
  3. Add sweet potatoes, chili powder, cumin, paprika, salt, and pepper. Stir well.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Add beans and diced tomatoes. Simmer for another 10 minutes.
  7. Serve hot.
