  • 1 large egg
  • 1/4 cup molasses
  • 1/4 cup brown sugar
  • 1 cup buttermilk
  • 2 tbsp melted butter

Instructions

  1. Whisk flour, baking powder, baking soda, salt, ginger, cinnamon, cloves, and nutmeg in a bowl.
  2. In another bowl, mix egg, molasses, brown sugar, buttermilk, and melted butter.
  3. Combine wet and dry ingredients, stirring until just mixed.
  4. Heat a lightly greased skillet over medium heat.
  5. Pour 1/4 cup batter per pancake onto the skillet.
  6. Cook until bubbles form on top, then flip and cook until golden brown.
  7. Serve warm with maple syrup or whipped cream.
