A quick and healthy low-carb chicken stir-fry bowl packed with vegetables and lean protein.

Ingredients

  • 2 boneless, skinless chicken breasts (sliced)
  • 1 tbsp olive oil
  • 1 bell pepper (sliced)
  • 1 cup broccoli florets
  • 1 carrot (julienned)
  • 1/2 cup snap peas
  • 2 cloves garlic (minced)
  • 1 tbsp soy sauce (low sodium)
  • 1 tsp ginger (grated)
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced chicken and cook for 5-6 minutes until no longer pink.
  3. Add garlic, ginger, and red pepper flakes. Stir for 1 minute.
  4. Add bell pepper, broccoli, carrot, and snap peas. Cook for 4-5 minutes.
  5. Pour in soy sauce and stir well.
  6. Season with salt and pepper.
  7. Serve hot in a bowl.

  • Substitute chicken with tofu for a vegetarian option.
  • Use tamari instead of soy sauce for a gluten-free version.
