A warm and hearty beef and vegetable soup perfect for winter nights.

Ingredients

  • 1 lb beef stew meat, cubed
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 potatoes, cubed
  • 4 cups beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp thyme

Instructions

  1. Brown the beef in a pot over medium heat.
  2. Add onions, carrots, and celery. Cook for 5 minutes.
  3. Pour in beef broth and add potatoes.
  4. Season with salt, pepper, and thyme.
  5. Simmer for 45 minutes until vegetables are tender.
