A rich and flavorful soup combining lentils with crispy bacon for a hearty meal.

Ingredients

  • 1 cup dried lentils
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 bay leaf
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Rinse lentils under cold water and drain.
  2. Heat olive oil in a large pot over medium heat.
  3. Add bacon and cook until crispy.
  4. Add onion, carrots, celery, and garlic. Cook until softened.
  5. Stir in lentils, chicken broth, bay leaf, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Remove bay leaf before serving.

Notes

  • Soak lentils overnight for faster cooking.
  • Adjust salt to taste.
  • Store leftovers in an airtight container for up to 3 days.
