A hearty and nutritious quinoa and black bean chili that’s perfect for a vegetarian dinner.

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cans black beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and bell pepper. Cook until softened.
  3. Stir in quinoa, black beans, diced tomatoes, and vegetable broth.
  4. Add chili powder, cumin, paprika, salt, and black pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Serve warm.

Notes

  • For extra heat, add a pinch of cayenne pepper.
  • Top with avocado or shredded cheese if desired.
  • Store leftovers in an airtight container for up to 3 days.
