A simple and flavorful homemade tomato basil soup made with fresh ingredients.

  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, sauté until soft.
  3. Add tomatoes, salt, and pepper. Cook for 10 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Blend the soup until smooth using an immersion blender.
