A creamy and comforting rice pudding made with coconut milk in the Instant Pot for a quick and easy dessert.

Ingredients

  • 1 can (13.5 oz) coconut milk
  • 2 cups water
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Add the rice, coconut milk, water, sugar, and salt to the Instant Pot.
  3. Close the lid and set the vent to sealing.
  4. Cook on high pressure for 10 minutes.
  5. Allow natural pressure release for 10 minutes, then quick release any remaining pressure.
  6. Stir in the vanilla extract and cinnamon.
  7. Serve warm or chilled.
