Sweet and tangy lemon glaze cookies that are soft and chewy.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tbsp lemon juice (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream butter and sugar until light and fluffy.
  3. Add egg, lemon zest, lemon juice, and vanilla extract. Mix well.
  4. Gradually add flour and salt. Combine until dough forms.
  5. Drop spoonfuls of dough onto a baking sheet.
  6. Bake for 10-12 minutes until edges are golden.
  7. Cool cookies on a wire rack.
  8. Mix powdered sugar and lemon juice for glaze.
  9. Drizzle glaze over cooled cookies.
  10. Let glaze set before serving.

Notes

  • For extra tang, add more lemon zest.
  • Store in an airtight container for up to 3 days.
  • Glaze thickens as it sets.
