Ingredients

  • 2 salmon fillets (6 oz each)
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried dill
  • 1 tsp garlic powder
  • 4 cups mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cucumber, diced
  • 1 tbsp chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place salmon fillets on a baking sheet lined with parchment paper.
  3. Drizzle with olive oil and lemon juice, then sprinkle with dill, garlic powder, salt, and pepper.
  4. Bake for 12-15 minutes or until the salmon flakes easily with a fork.
  5. While the salmon cooks, assemble the salad by tossing mixed greens, cherry tomatoes, red onion, cucumber, and parsley in a large bowl.
  6. Once the salmon is done, let it cool slightly, then flake it into large pieces.
  7. Top the salad with the flaked salmon and serve immediately.
