  • 1 cup whole wheat flour
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 egg
  • 1/4 cup unsweetened applesauce
  • 1/4 cup low-fat milk
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1 medium apple, peeled and diced

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, mix whole wheat flour, almond flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk the egg, applesauce, milk, honey, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apple.
  5. Divide the batter evenly into the muffin cups.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let them cool for 5 minutes before removing from the tin.

Notes

  • Store muffins in an airtight container for up to 3 days.
  • For a sweeter taste, add an extra tablespoon of honey.
  • Replace almond flour with oat flour if needed.
