Crispy on the outside, creamy on the inside, these mashed potato cheese puffs make a perfect snack or appetizer.

Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs
  • 2 tablespoons butter, melted

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Mix mashed potatoes, cheddar cheese, Parmesan cheese, egg, salt, and pepper in a bowl.
  3. Shape the mixture into small balls, about 1 inch in diameter.
  4. Roll each ball in breadcrumbs.
  5. Place on a baking sheet and drizzle with melted butter.
  6. Bake for 20-25 minutes until golden brown.

Notes

  • Use leftover mashed potatoes for best results.
  • For extra crispiness, broil for 1-2 minutes at the end.
  • Serve warm with sour cream or ketchup.
