Scale
2 boneless, skinless chicken breasts
1 cup cooked brown rice
1 can black beans, drained and rinsed
1 cup corn kernels
1 bell pepper, diced
1 avocado, sliced
1/2 cup salsa

In the same pan, sauté the diced bell pepper for 2-3 minutes until slightly softened.
Assemble the bowls: Start with a base of brown rice, then add black beans, corn, bell pepper, and sliced chicken.
Top with avocado slices, salsa, and a squeeze of lime juice.
Store in airtight containers for up to 4 days in the fridge.
Notes
You can substitute brown rice with quinoa or cauliflower rice.
For extra flavor, add a sprinkle of shredded cheese or Greek yogurt.
