Mechado is a classic Filipino beef stew known for its rich tomato-based sauce and tender beef chunks. It’s a hearty dish often served with rice.

Ingredients

  • 1 kg beef chuck, cubed
  • 3 tbsp soy sauce
  • 3 tbsp calamansi juice
  • 1 tsp ground black pepper
  • 3 tbsp cooking oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups tomato sauce
  • 1 cup beef broth
  • 2 bay leaves
  • 2 potatoes, cubed
  • 1 bell pepper, sliced
  • 1 carrot, sliced

Instructions

  1. Marinate beef in soy sauce, calamansi juice, and black pepper for 30 minutes.
  2. Heat oil in a pot and sauté onion and garlic until fragrant.
  3. Add marinated beef and cook until browned.
  4. Pour in tomato sauce and beef broth. Add bay leaves.
  5. Simmer for 1 hour or until beef is tender.
  6. Add potatoes, bell pepper, and carrot. Cook for another 15 minutes.
  7. Serve hot with rice.
