A refreshing Mediterranean pasta salad packed with fresh vegetables and tangy flavors. Perfect for meal prep or a quick vegetarian lunch.

Ingredients

  • 8 oz pasta (penne or fusilli)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine pasta, tomatoes, cucumber, red onion, olives, and feta cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour dressing over the pasta salad and toss to combine.
  5. Sprinkle chopped parsley on top before serving.
