Mini spinach and feta quiche appetizers are perfect for parties. These easy quiche bites are make-ahead finger food that everyone will love.

Ingredients

  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 eggs
  • 1/4 cup milk
  • 1 sheet puff pastry, thawed
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Roll out puff pastry and cut into small circles.
  3. Press pastry circles into mini muffin tin.
  4. Whisk eggs, milk, salt, and pepper in a bowl.
  5. Divide spinach and feta among pastry cups.
  6. Pour egg mixture over filling.
  7. Bake for 15-20 minutes until golden.
  8. Cool slightly before serving.
