A simple one-pot chicken and quinoa dish that’s quick, healthy, and delicious.

Ingredients

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup quinoa, rinsed
  • 2 cups chicken broth
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup diced bell peppers
  • 1/2 cup diced onions

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken and cook until browned.
  3. Add onions and bell peppers, sauté for 3 minutes.
  4. Stir in quinoa, chicken broth, garlic powder, onion powder, salt, and pepper.
  5. Bring to a boil, then reduce heat to low and cover.
  6. Simmer for 15-20 minutes until quinoa is cooked and liquid is absorbed.
  7. Fluff with a fork and serve.

Notes

  • Rinse quinoa to remove bitterness.
  • Adjust seasoning to taste.
