A simple one-pot creamy sun-dried tomato orzo that’s quick to make and perfect for weeknight dinners.

Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add minced garlic and sauté for 30 seconds.
  3. Add orzo and cook for 2 minutes, stirring occasionally.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat, cover, and simmer for 10 minutes until orzo is tender.
  6. Stir in heavy cream, sun-dried tomatoes, salt, and pepper.
  7. Cook for another 2 minutes until creamy.
  8. Remove from heat and stir in Parmesan cheese.
  9. Garnish with fresh basil and serve warm.

Notes

  • Use chicken broth for a non-vegetarian version.
  • Adjust creaminess by adding more or less heavy cream.
  • Store leftovers in an airtight container for up to 3 days.
