One-Pot Garlic Lemon Pasta

A quick and flavorful one-pot pasta dish with garlic and lemon, perfect for a weeknight meal.

Ingredients

  • 8 oz pasta
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 lemon, juiced and zested
  • 2 cups vegetable broth
  • 1/4 tsp red pepper flakes
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add minced garlic and sauté until fragrant, about 30 seconds.
  3. Stir in pasta, lemon juice, zest, red pepper flakes, and vegetable broth.
  4. Bring to a boil, then reduce heat and simmer for 10-12 minutes, stirring occasionally, until pasta is cooked and liquid is absorbed.
  5. Season with salt and pepper.
  6. Top with Parmesan cheese and fresh parsley before serving.

Notes

  • Use any short pasta like penne or fusilli.
  • Adjust red pepper flakes for more or less heat.
