A classic French dessert with a rich custard base topped with a layer of hard caramelized sugar.

Ingredients

  • 2 cups heavy cream
  • 1 vanilla bean (or 1 tsp vanilla extract)
  • 5 egg yolks
  • 1/2 cup granulated sugar
  • 2 tbsp turbinado sugar (for caramelizing)

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Heat cream and vanilla in a saucepan until steaming, then let steep for 10 minutes.
  3. Whisk egg yolks and granulated sugar until pale.
  4. Slowly pour the warm cream into the yolk mixture while whisking.
  5. Strain the custard into ramekins and bake in a water bath for 40-45 minutes.
  6. Chill for at least 4 hours or overnight.
  7. Sprinkle turbinado sugar on top and caramelize with a torch.

Notes

  • Use room temperature eggs for smoother custard.
  • Don’t overbake – the center should still jiggle slightly.
  • Chill completely before caramelizing.
