A quick and flavorful chicken and veggie curry perfect for weeknight dinners.

Ingredients

  • 1 lb chicken breast, cubed
  • 1 cup mixed vegetables (bell peppers, carrots, peas)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 cup coconut milk
  • 1 tbsp olive oil
  • Salt to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add chicken, cook until browned.
  4. Stir in vegetables and curry powder.
  5. Pour in coconut milk, simmer for 15 minutes.
