A simple and quick vegan red lentil curry that’s packed with flavor and ready in under 30 minutes.

Ingredients

  • 1 cup red lentils
  • 2 cups water
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • Salt to taste

Instructions

  1. Rinse the lentils under cold water.
  2. Heat oil in a pot over medium heat.
  3. Add onion, garlic, and ginger. Cook until soft.
  4. Stir in curry powder and turmeric.
  5. Add lentils, water, tomatoes, and coconut milk.
  6. Bring to a boil, then simmer for 20 minutes.
  7. Season with salt.
