Ingredients

  • 1 cup red lentils, rinsed
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and carrots, sauté for 5 minutes.
  3. Stir in garlic, cumin, and turmeric. Cook for 1 minute.
  4. Add lentils and vegetable broth. Bring to a boil.
  5. Reduce heat, cover, and simmer for 20 minutes.
  6. Blend half the soup if a smoother texture is desired.
  7. Season with salt and pepper.
  8. Serve hot.
