A nutritious and flavorful quinoa salad packed with roasted vegetables, perfect for a healthy lunch or make-ahead meal.

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • 1 red onion, chopped
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, juiced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss bell pepper, zucchini, and red onion with olive oil, salt, and pepper. Roast for 20 minutes.
  3. Rinse quinoa and cook in water for 15 minutes or until fluffy.
  4. Mix cooked quinoa with roasted vegetables.
  5. Add fresh parsley and lemon juice. Toss well.
  6. Serve warm or chilled.
