A simple and flavorful dish combining roasted beets and sweet potatoes topped with crumbled feta cheese.

Ingredients

  • 2 medium beets, peeled and cubed
  • 2 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 cup crumbled feta cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the beets and sweet potatoes with olive oil, salt, pepper, and thyme.
  3. Spread them evenly on a baking sheet.
  4. Roast for 25-30 minutes until tender and slightly caramelized.
  5. Remove from the oven and sprinkle with feta cheese.
  6. Serve warm.
