A hearty and comforting soup made with potatoes and leeks, perfect for chilly days.

Ingredients

  • 2 large leeks, cleaned and sliced
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 bay leaf
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add leeks, onion, and garlic. Sauté until softened.
  3. Add potatoes, vegetable broth, bay leaf, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes or until potatoes are tender.
  5. Remove bay leaf. Blend half the soup for a creamy texture.
  6. Stir in heavy cream and heat through.
  7. Garnish with fresh parsley before serving.

Notes

  • Use an immersion blender for easier blending.
  • For a vegan version, replace butter with olive oil and cream with coconut milk.
  • Store leftovers in an airtight container for up to 3 days.
