- 2 large leeks, cleaned and sliced
- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tbsp butter

- 1/2 tsp black pepper
- 1 bay leaf
- 2 tbsp fresh parsley, chopped
