A delicious and creamy pasta dish featuring roasted butternut squash, garlic, and herbs. Perfect for a cozy dinner.

  • 1 medium butternut squash, peeled and cubed
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 8 oz pasta of your choice
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss butternut squash with olive oil, garlic, thyme, salt, and pepper. Roast for 25 minutes.
  3. Cook pasta according to package instructions. Drain and set aside.
  4. Blend roasted squash with heavy cream until smooth.
  5. Toss pasta with the squash sauce and Parmesan cheese.
  6. Garnish with fresh parsley before serving.
