A hearty and flavorful beef stew cooked slowly to perfection. Tender beef, vegetables, and rich broth make this a comforting meal.

Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Brown the beef cubes on all sides, then remove from the pot.
  3. Sauté onions and garlic until soft.
  4. Add carrots, potatoes, tomato paste, thyme, and rosemary. Stir well.
  5. Return beef to the pot and pour in beef broth.
  6. Bring to a boil, then reduce heat and simmer for 2-3 hours until beef is tender.
  7. Season with salt and pepper before serving.

Notes

  • For extra flavor, deglaze the pot with red wine before adding broth.
  • You can use a slow cooker on low for 6-8 hours.
  • Store leftovers in the fridge for up to 3 days.
