A quick and healthy sheet pan meal with lemon garlic shrimp and zucchini. Perfect for a busy weeknight dinner.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 medium zucchinis, sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 lemon, juiced and zested
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss shrimp and zucchini with olive oil, garlic, lemon juice, salt, black pepper, and red pepper flakes.
  3. Spread the mixture evenly on a sheet pan.
  4. Bake for 10-12 minutes until shrimp are pink and cooked through.
  5. Sprinkle with lemon zest and fresh parsley before serving.

Notes

  • Use fresh shrimp for best results.
  • Adjust spice level by adding more or less red pepper flakes.
  • Serve with rice or crusty bread.
