A simple and delicious sheet pan meal featuring pork tenderloin and potatoes.

Ingredients

  • 1 pork tenderloin (1.5 lbs)
  • 1.5 lbs baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried rosemary

Instructions

  1. Preheat oven to 400°F.
  2. Toss potatoes with olive oil, salt, pepper, garlic powder, and rosemary.
  3. Spread potatoes evenly on a sheet pan.
  4. Season pork tenderloin with salt and pepper, then place it on the pan.
  5. Roast for 25-30 minutes until pork reaches 145°F internally.
  6. Let pork rest for 5 minutes before slicing.
