  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 2 tbsp olive oil
  • 1 tbsp fajita seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 small flour tortillas
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss chicken, bell peppers, and onion with olive oil, fajita seasoning, salt, and black pepper.
  3. Spread mixture evenly on a sheet pan.
  4. Bake for 20-25 minutes, stirring halfway, until chicken is cooked through.
  5. Warm tortillas according to package instructions.
  6. Serve fajitas with tortillas, garnished with cilantro and lime wedges.
