- 1.5 lbs boneless, skinless chicken breasts
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 medium onion, diced
- 1 can (4 oz) diced green chiles
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup sour cream (optional)
- 1 cup shredded Monterey Jack cheese
- 2 tbsp lime juice
- Fresh cilantro for garnish
- Place chicken, beans, corn, onion, green chiles, garlic, broth, cumin, oregano, salt, and pepper in the slow cooker.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Remove chicken and shred with two forks. Return to the slow cooker.
- Stir in sour cream, cheese, and lime juice.
- Garnish with fresh cilantro before serving.
Notes
- For a spicier chili, add diced jalapeños.
- Top with avocado, extra cheese, or tortilla chips if desired.
