A hearty and flavorful white chicken chili made easy in the slow cooker. Perfect for busy days.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 medium onion, diced
  • 1 can (4 oz) diced green chiles
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup sour cream (optional)
  • 1 cup shredded Monterey Jack cheese
  • 2 tbsp lime juice
  • Fresh cilantro for garnish

Instructions

  1. Place chicken, beans, corn, onion, green chiles, garlic, broth, cumin, oregano, salt, and pepper in the slow cooker.
  2. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  3. Remove chicken and shred with two forks. Return to the slow cooker.
  4. Stir in sour cream, cheese, and lime juice.
  5. Garnish with fresh cilantro before serving.

Notes

  • For a spicier chili, add diced jalapeños.
  • Top with avocado, extra cheese, or tortilla chips if desired.
  • Store leftovers in the fridge for up to 3 days.
