  • 1 1/2 cups warm water (110°F)
  • 1 tbsp sugar
  • 2 tsp salt
  • 1 package active dry yeast
  • 4 1/2 cups all-purpose flour
  • 2 tbsp unsalted butter, melted
  • 10 cups water
  • 2/3 cup baking soda
  • 1 large egg yolk
  • 1 tbsp water
  • coarse salt for topping

Instructions

  1. Dissolve sugar and salt in warm water. Sprinkle yeast on top and let sit for 5 minutes.
  2. Mix in flour and melted butter until dough forms.
  3. Knead dough for 7-10 minutes until smooth.
  4. Place dough in oiled bowl, cover, and let rise for 1 hour.
  5. Preheat oven to 450°F. Bring 10 cups water and baking soda to boil.
  6. Divide dough into 12 pieces and roll into ropes. Shape into pretzels.
  7. Boil each pretzel for 30 seconds, then place on baking sheet.
  8. Whisk egg yolk and water, brush on pretzels, and sprinkle with salt.
  9. Bake for 12-14 minutes until golden brown.
