Delicious spiced apple muffins perfect for breakfast or a snack. These muffins are moist, flavorful, and easy to make.

  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 1/2 cups peeled and diced apples

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
  4. Alternately add the dry ingredients and milk to the butter mixture, mixing just until combined.
  5. Fold in the diced apples.
  6. Spoon the batter into the muffin cups, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack.

  • Use fresh, crisp apples like Granny Smith for best texture.
  • Do not overmix the batter to keep muffins tender.
