A flavorful pasta dish featuring spicy Cajun chicken tossed with rigatoni in a creamy mozzarella Alfredo sauce.

Ingredients

  • 12 oz rigatoni pasta
  • 2 boneless, skinless chicken breasts, sliced
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook rigatoni according to package instructions. Drain and set aside.
  2. Toss chicken slices with Cajun seasoning.
  3. Heat olive oil in a pan over medium heat. Cook chicken until browned and fully cooked.
  4. Remove chicken from the pan. In the same pan, sauté garlic until fragrant.
  5. Add heavy cream, mozzarella, and Parmesan cheese. Stir until melted and smooth.
  6. Mix in cooked pasta and chicken. Stir until well coated.
  7. Season with salt and pepper. Garnish with fresh parsley.

Notes

  • Adjust Cajun seasoning for more or less spice.
  • Use freshly grated cheese for smoother sauce.
  • Reserve pasta water to thin sauce if needed.
