  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 can diced tomatoes
  • 1 can coconut milk
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp salt
  • 2 cups vegetable broth
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, garlic, and ginger. Cook until soft.
  3. Stir in curry powder, turmeric, and cumin. Cook for 1 minute.
  4. Add lentils, diced tomatoes, coconut milk, and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer for 25 minutes.
  6. Season with salt and serve or store for meal prep.
