A hearty and nutritious warm vegetable and chickpea stew, perfect for a cozy dinner. Packed with protein and fiber, this dish is both satisfying and healthy.

Ingredients

  • 1 cup chickpeas, soaked overnight
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 can diced tomatoes (14 oz)
  • 4 cups vegetable broth
  • 1 cup spinach, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes until softened.
  3. Stir in garlic, cumin, and paprika. Cook for 1 minute.
  4. Add diced tomatoes and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Add chickpeas and cook for another 10 minutes.
  7. Stir in spinach and cook until wilted.
  8. Season with salt and pepper. Serve warm.

Notes

  • For extra flavor, add a bay leaf while simmering.
  • You can use canned chickpeas for a quicker version.
  • Top with fresh parsley before serving.
