Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 sweet potato, diced
  • 1 carrot, sliced
  • 1 cup cauliflower florets
  • 1 cup chickpeas, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 1 cup vegetable broth
  • 1/2 cup coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Stir in curry powder, cumin, and turmeric, cook for 1 minute.
  4. Add sweet potato, carrot, and cauliflower, cook for 5 minutes.
  5. Pour in diced tomatoes, vegetable broth, and chickpeas. Bring to a boil.
  6. Reduce heat, simmer for 15 minutes or until vegetables are tender.
  7. Stir in coconut milk, season with salt and pepper.
  8. Garnish with fresh cilantro before serving.
